Just Peachy!

August is peak peach and berry season, so this dessert captures the sweetness of late summer fruit.

Ingredients:

  • For the filling:

    • 4 ripe peaches, sliced

    • 1 cup fresh blueberries (or blackberries)

    • 1/2 cup granulated sugar

    • 1 tbsp lemon juice

    • 1 tbsp cornstarch

    • 1 tsp vanilla extract

  • For the topping:

    • 1 cup all-purpose flour

    • 1/4 cup sugar

    • 1 tsp baking powder

    • 1/4 tsp salt

    • 6 tbsp cold butter, cubed

    • 1/3 cup heavy cream (plus a little for brushing)

  • For serving:

    • Freshly whipped cream or vanilla ice cream

Instructions:

 

  1. Prepare the fruit filling

    • Preheat oven to 375°F (190°C).

    • In a large bowl, toss peaches, berries, sugar, lemon juice, cornstarch, and vanilla. Spread evenly into a greased baking dish.

  2. Make the topping

    • In another bowl, whisk together flour, sugar, baking powder, and salt.

    • Cut in cold butter with a fork or pastry cutter until mixture resembles coarse crumbs.

    • Stir in cream until dough just comes together.

  3. Assemble & bake

    • Drop spoonfuls of dough over the fruit filling.

    • Brush with a little extra cream for golden tops.

    • Bake 35–40 minutes, until topping is golden and fruit is bubbling.

  4. Serve warm with whipped cream or vanilla ice cream.
